Wild & White Rice Salad

- 3 tbsp olive oil
- 3 tbsp orange juice
- 2 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- 1 cup long grain and wild rice
- 2 cups water
- 2 celery ribs, diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped dried cranberries
Cook the long grain and wild rice according to package directions. Allow it to cool completely.
In a small bowl, whisk together the dressing ingredients. Set it aside.
In a large mixing bowl, toss together the white rice, wild rice, celery, red onion, parsley, dried cranberries, and the dressing.
Serve immediately or store in the refrigerator for up to 5 days.
