White Mushroom Pizza

Ingredients
- 1 16-oz pizza dough, store-bought or homemade
- 1 tbsp oil
- 2 cups sliced mushrooms
- 3 cups choppepd spinach
- 3 garlic cloves, minced
- 1 tsp fresh thyme leaves
- 1 tsp chopped fresh rosemary
- 1 cup ricotta cheese
- 1 cup sliced mozzarella cheese
- Salt and pepper to taste
Preparation
Preheat the oven to 500ºF.
In a skillet, heat the oil over medium-high heat. Add the mushrooms. Cook, stirring occasionally, until the mushrooms release their juices and begin to brown, about 4 to 5 minutes. Add the garlic, rosemary and thyme and cook until fragrant, about 30 seconds. Add the spinach and continue to cook until it has wilted.
Roll out the pizza dough to the desired thickness. Transfer the pizza to a baking sheet and spread the ricotta over the dough. Top with the remaining toppings and bake until the crust is golden and the cheese has melted, 12 to 15 minutes.
Serve immediately or store in the refrigerator for up to 3 days.
