Ingredients
Turkey Sausage & Sweet Potato Breakfast Hash
- 1 tsp oil
- 1/2 red onion, diced
- 1 green bell pepper, diced
- 1 lb turkey sausage, removed from its casings
- 1 large sweet potato, peeled and diced
- 1/4 cup water
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
To Serve
- 1 cup blueberries
- 1 cup blackberries
- 4 soft boiled eggs
Preparation
In a large skillet, heat the oil over medium-high heat. Add the onion and pepper and cook, stirring, until they begin to soften, about 2 to 3 minutes. Add the sausage and cook, breaking it up with the side of a spoon. Cook until it is no longer pink, about 5 minutes. Stir in the sweet potatoes and water and cover the skillet with a lid. Cook, stirring occasionally, until the sweet potatoes are tender and the turkey is cooked through, about 5 to 7 minutes. Season with the smoked paprika, garlic powder, onion powder, salt, and pepper.
Serve immediately with the berries and eggs or store in the refrigerator for up to 3 days.
