Tomato Spinach Mini Fritattas

- 6 large eggs
- 2 tbsp milk (optional)
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup chopped baby spinach
- 1 cup halved cherry tomatoes
- 1/2 cup crumbled goat cheese
Preheat the oven to 375°F. Grease a muffin tin with oil or cooking spray. Set it aside.
In a large measuring cup, whisk together eggs, milk, garlic powder, salt and pepper. Set aside.
Fill each muffin cup with chopped spinach, tomatoes and goat cheese. Pour the egg mixture into each muffin cup. Bake until the eggs have set, about 15 to 20 minutes.
Serve immediately or store in the refrigerator for up to 3 days.
