Ingredients
Sesame Ginger Dressing
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 lime, juice
- 1 tbsp sesame oil
- 1 tbsp agave syrup
- 1 garlic clove, grated
- 1 tsp grated fresh ginger
Salad
- 2 English cucumbers, julienned
- 2 carrots, peeled and julienned
- 1 mango, pitted, peeled and julienned
- 1 red bell pepper, julienned
- 1 green onion, sliced
- 1 tsp sesame seeds
Preparation
In a small bowl, whisk together all of the dressing ingredients. In a large bowl, toss together the cucumber, carrot, and pepper. Pour the dressing over the salad and garnish with the sesame seeds and green onion.
Serve immediately or store in the refrigerator for up to 3 days.
