Strawberry Cheesecake French Toast

- 6 ounces cream cheese, room temperature
- 1 teaspoon vanilla extract, divided
- Zest and juice of 1/2 lemon
- 1/2 cup diced strawberries
- 1 crusty French loaf
- 4 large eggs
- 1/2 cup milk or cream
- 2 tablespoons butter
In a stand mixer or with a hand mixture beat cream cheese, strawberries and half of the vanilla extract until they are smooth.
Using a sharp serrated bread knife cut 4 1.5” slices of bread. Using a small serrated knife cut a pocket into the bread being sure not to cut all the way through. Fill each pocket with the strawberry cream cheese mixture.
In a bowl whisk eggs, milk, and the remaining vanilla extract.
Heat butter in a nonstick skillet over medium heat. Dip each slice of bread into the egg mixture and fry it until it is golden brown on both sides.
