Slow Roasted Beef Tenderloin

Ingredients
- 1 beef tenderloin, (2-3 pounds, trimmed and tied with string)
- Salt and freshly ground black pepper
- 1 tablespoon oil
- 1/2 cup beef broth
- 3-4 rosemary sprigs
- 4 garlic cloves, sliced
Preparation
Preheat the oven to 325°F.
Season the beef with salt and pepper to taste. In an oven-safe skillet, heat oil over high heat. Add the beef to the pan and sear it on all sides. Deglaze the pan by pouring beef broth over beef. Add garlic slices and rosemary.
Transfer the skillet to the oven and bake for 45 to 50 minutes, or until beef is cooked to your liking (125-130ºF for medium rare). Once beef is cooked, remove from heat and tent with aluminum foil. Allow to rest for 10 minutes. Slice to desired thickness and serve immediately.
