Simple Pasta Bolognese

- 1 tablespoon olive oil
- 1 yellow onion, finely diced
- 1 carrot, peeled and finely diced
- 1 celery stalk, finely diced
- 2 garlic cloves, minced
- 1 pound lean ground beef
- 1 tablespoon tomato paste
- 1 19-ounce can diced tomatoes
- 1 cup beef broth
- 1/2 cup whole milk
- Chopped fresh parsley
- Chopped fresh basil
- Salt and freshly ground black pepper
- 1 pound pasta of your choice, cooked according to package directions
In a large sauce pot, heat the oil over medium-high heat. Add the ground beef. Crumble it with a spoon and cook, stirring often, until it is no longer pink. Remove beef from pot with a slotted spoon and set aside.
Add the onion, celery and carrot. Cook until they become soft, about 5 minutes. Add garlic and cook for an additional 30 seconds. Return the beef to pot. Add the tomato paste and stir well. Add the diced tomatoes, beef broth and milk. Bring the mixture to a boil. Reduce the heat to medium-low and simmer the sauce for 30 minutes to 1 hour, stirring occasionally. Stir in the parsley, basil, salt and pepper. Simmer for another 5 to 10 minutes.
Serve immediately over cooked pasta with freshly grated Parmesan or store in the refrigerator for up to 3 days.
