Shredded Carrot Salad

- 4 carrots, peeled and shredded
- 1 tbsp apple cider vinegar
- 1/2 lemon, juice
- 1 tsp grated fresh ginger
- 1/4 tsp ground cumin
- Salt and pepper to taste
- 1 tbsp chopped fresh coriander
- 1 tbsp chopped fresh mint
In a large bowl, combine all of the ingredients.
Serve immediately topped with more coriander and mint or store in the refrigerator for up to 5 days.
