Shakshuka Baked Eggs

Ingredients
- 1 tsp oil
- 1 cup strained tomatoes
- 1/2 tsp smoked paprika
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp red pepper flakes
- 1 garlic clove, minced
- 2 large eggs
- 2 tbsp crumbled feta cheese
- Salt and pepper to taste
Preparation
Preheat the oven to 425ºF. Lightly grease two ramekins with oil. Set them aside.
In a small bowl, mix together the strained tomatoes, smoked paprika, cumin, coriander, red pepper flakes, garlic, salt and pepper. Divide the mixture between the two ramekins and crack an egg into the centre of each. Bake the eggs until they are cooked to your liking, about 12 to 15 minutes.
Serve immediately with fresh bread.
