- 1 potato, peeled and diced
- 1/4 15-oz can chickpeas, drained and rinsed
- 2 tsp oil
- 1 1/2 tsp curry powder
- 1 whole wheat tortilla
- 1 tbsp mango chutney
- 1/2 cup baby spinach
- 1/4 cup frozen green peas
Preheat the oven to 375°F. Line a baking sheet with parchment paper.
Arrange the potatoes and chickpeas on the baking sheet. Drizzle them with the oil and season them with the curry powder. Toss gently.
Bake until the potatoes are tender and begin to brown, about 25 to 30 minutes.
Layer all of the ingredients in the centre of the tortilla. Roll it up.
