Ingredients
- 6 white potatoes, peeled and cut into wedges
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 lemon, juice
- 1 tbsp Greek seasoning
- Salt and pepper to taste
- 1/2 cup chicken broth
- 1 tbsp chopped fresh parsley
Preparation
Preheat the oven to 375°F.
In a large bowl, combine the potatoes, olive oil, garlic, lemon, Greek seasoning, salt, and pepper. Toss until the potatoes are evenly coated.
Pour the potatoes into a large baking dish. Add the chicken broth. Bake until the potatoes are tender and golden, about 50 to 60 minutes.
Enjoy immediately topped with the parsley or store in the refrigerator for up to 5 days.
