Quick & Easy Chicken Soup

- 1 tablespoon oil
- 1 yellow onion, diced
- 4 celery ribs, diced
- 4 carrots, diced
- 2 cups cooked shredded chicken
- 5 cups chicken broth
- Salt and freshly ground black pepper
In a large Dutch oven or soup pot, heat the oil over medium-high heat. Add the onion, celery, and carrot and cook, stirring, until the onion begins to soften, about 4 minutes. Add the cooked chicken and chicken broth. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 15 to 20 minutes. Season with salt and pepper.
Serve immediately or store in the refrigerator for up to 3 days.
