Pumpkin Spice Oatmeal

- 1 cup old-fashioned rolled oats (gluten-free)
- 1 cup water
- 1 cup milk
- 1/2 cup pumpkin puree
- 2 tbsp maple syrup
- 1 tsp pumpkin pie spice
- 1/2 cup vanilla Greek yogurt
- 1/4 cup pumpkin seeds
In a medium saucepan, combine the oats, water, milk, pumpkin puree, maple syrup, and pumpkin pie spice. While stirring, bring the mixture to a boil over medium-high heat. Reduce the heat to medium-low, cover, and cook, stirring occasionally, for about 5 minutes.
Serve immediately topped with yogurt and pepitas.
