Orange & Fennel Salad

- 3 tbsp olive oil
- 1/4 cup orange juice
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
- 4 cups arugula
- 3 navel oranges, peeled and sliced
- 1 fennel bulb, thinly sliced
- 1/2 Spanish onion, thinly sliced
- 1/3 pine nuts, toasted
In a small bowl, whisk orange juice, olive oil, parsley, salt and pepper. Set it aside.
Arrange the arugula in a large serving dish. Top it with the oranges, fennel, onion, pine nuts, and the dressing.
