Mocha Latte Quinoa Bowl

- 1/2 cup quinoa
- 1 cup brewed coffee
- 1 tsp cocoa powder
- 1 tbsp maple syrup
- 1/4 cup vanilla yogurt
- 1/4 tsp ground cinnamon
In a small saucepan, combine quinoa, coffee, cocoa powder and maple syrup. Stir well. Bring the mixture to a boil and then reduce the heat to low, cover and allow quinoa to simmer until all of the liquid has been absorbed, about 15 to 20 minutes. Remove the quinoa from heat and allow it to sit, covered, for another 5 to 10 minutes.
Serve immediately topped with yogurt and cinnamon or store in the refrigerator for up to 3 days.
