Ingredients
Apple Cider Vinaigrette
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp chopped fresh chives
- 1 tsp chopped fresh dill
- Salt and pepper to taste
Salad
- 4 cups mixed greens
- 1/2 English cucumber, seeded and sliced
- 1/2 cup sliced radishes
- 2 tbsp pumpkin seeds
Preparation
In a small bowl, whisk together the vinaigrette ingredients.
In a large bowl, toss together the mixed greens, cucumber, radishes, and vinaigrette.
Serve the salad immediately topped with the pumpkin seeds. Store the salad and vinaigrette separately in the refrigerator for up to 3 days. Toss the salad just before serving.
