Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 garlic clove, minced
- 2 tbsp olive oil
- 1/2 lemon, juice
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh basil
- Salt and pepper to taste
- 1/4 cup crumbled goat cheese
Preparation
In a medium saucepan, combine the quinoa, vegetable broth, and garlic over medium-high heat. Once the broth reaches a boil, reduce the heat to low, cover and simmer for 20 minutes. Turn off the heat and let the quinoa sit for another 5 minutes. Season the quinoa with olive oil, lemon juice, parsley, basil, salt, and pepper. Mix well.
Serve immediately or store in the refrigerator for up to 5 days.
