Hearty Mushroom Soup

Ingredients
- 2 tablespoons butter
- 1 large yellow onion, thinly sliced
- 1 pound cremini mushrooms, thinly sliced
- 2 tablespoons flour
- 1 cup milk
- 2 1/2 cups mushroom broth
- 2 tablespoons chopped fresh dill
- 2 tablespoons paprika
- 1/2 cup sour cream
Preparation
In a large soup pot or Dutch oven, melt butter over medium-high heat. Add onions and mushrooms and cook for 6-8 minutes until they become soft and golden. Add flour and cook, stirring constantly, for an additional minute. Add milk, mushroom broth, dill and paprika. Reduce heat to medium-low and simmer for 10 to 15 minutes. Stir in sour cream.
Serve immediately.
