Ingredients
- 3 large zucchini, julienned
- 1/2 cup halved cherry tomatoes
- 1/4 red onion, thinly sliced
- 1/4 cup diced roasted red peppers
- 1/4 cup pitted and chopped Kalamata olives
- 1/4 cup crumbled feta cheese
- 3 tbsp olive oil
- 1 lemon, juice
- 1 tsp Greek seasoning
- Salt and pepper to taste
- 2 tbsp hopped fresh parsley for serving
Preparation
In a large bowl, toss all ingredients until they are well combined. Serve the salad topped with a little more crumbled feta and the fresh parsley.
Serve immediately or store in the refrigerator for up to 3 days.
