Ingredients
Greek-Inspired Veggie Burgers
- 2 15-oz cans cannellini beans. drained and rinsed
- 2 garlic cloves, minced
- 1/2 red onion, grated
- 1/2 red bell pepper, finely diced
- 2 tsp Greek seasoning
- 1/2 cup crumbled feta cheese
- 1/2 lemon, zest and juice
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
- 1 cup breadcrumbs
- 1 large egg
Toppings
- 4 hamburger buns
- 1/4 tzatziki sauce
- 1/2 cup chopped romaine lettuce
- 1 tomato, sliced
- 1/4 red onion, sliced
Preparation
In the bowl of a food processor combine white beans, garlic, red onion, red pepper, lemon zest, lemon juice, Greek seasoning, salt, pepper, feta cheese, parsley, breadcrumbs and egg. Pulse until the mixture resembles coarse crumbs. Form four to six uniform patties. Grill the burgers on both sides until they have heated through. Place the grilled burgers on a buns and garnish with tzatziki, lettuce, tomato and onion.
Serve immediately or store the patties in the refrigerator for up to 5 days.
