Feta Stuffed Turkey Meatballs

Ingredients
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1 lb ground turkey
- 2 garlic cloves, minced
- 1/2 red onion, grated
- 1/4 cup chopped roasted red peppers
- 1/4 cup chopped fresh parsley
- 1 lemon, zest
- 1 tbsp Greek seasoning
- 1 large egg
- 4 oz feta cheese, cut into 1/2 inch cubes
- 1 cup homemade tzatziki sauce
- Salt and pepper to taste
Preparation
Preheat the oven to 375°F. Line a baking sheet with parchment paper.
In a small bowl, mix the milk and breadcrumbs. Set it aside.
In a large bowl, combine the ground turkey, garlic, red onion, roasted red pepper, Greek seasoning, salt, pepper and lemon zest. Add the egg and breadcrumb mixture. Mix until well combined. Create a small patty with the mixture in the palm of your hand. Place a cube of feta cheese in the centre of the patty and wrap the meat mixture around it. Form the mixture into 1.5” inch balls and place on the baking sheet. Bake until they are cooked through, about 30 to 40. Serve immediately with homemade Greek salad and tzatziki sauce or store in the refrigerator for up to 3 days.
