Ingredients
Burgers
- 2 15-oz cans chickpeas, drained and rinsed
- 1/2 red onion, chopped
- 1-2 garlic cloves, minced
- 1 lemon, zest and juice
- 1/4 cup fresh parsley
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 1 large egg
- 1 tbsp olive oil
To serve
- 4 hamburger buns
- 1 tomato, sliced
- 1/2 cup chopped romaine lettuce
- 1/4 cup tzatziki sauce
Preparation
Add all of the ingredients, except the olive oil into a food processor. Gently pulse until all of the ingredients are combine and look like coarse crumbs. Don’t over mix or you’ll end up with hummus.
Shape the mixture into 4 patties. Brush each side with the olive oil and then place the patties in the refrigerator or freezer for 15 to 20 minutes before grilling.
Grill over medium-high heat, until grill marks form and they are heated through, about 3 to 4 minutes per side.
Serve immediately with tomato, onion, and tzatziki sauce or store in the refrigerator for up to 3 days.
