Cucumber Mint Salad

- 2 English cucumbers, diced
- 1/4 cup red onion, finely diced
- 1 cup plain yogurt
- 1 lemon, zest and juice
- 2 tsp honey
- 1/2 tsp ground cumin
- 2 tbsp chopped fresh mint
- Salt and pepper to taste
In a large bowl, combine all of the ingredients and toss well. Divide salad into individual portions.
Enjoy immediately or store in the refrigerator for 4 to 5 days.
