Cucumber Mint Raita

- 1 cup plain yogurt
- 1 English cucumber, peeled, seeded and grated
- 2 tbsp lemon juice
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 1 tbsp chopped fresh mint
In a small bowl, combine all of the ingredients and stir well.
Serve immediately or store in the refrigerator for up to 5 days.
