Crunchy Noodle Salad

- 1 tbsp sesame oil
- 1 tbsp tamari sauce
- 2 tbsp rice vinegar
- 2 tsp agave syrup
- 1 garlic clove, grated
- 1/2 tsp grated fresh ginger
- 12 oz vermicelli rice noodles, cooked according to package directions
- 1/2 cup shredded red cabbage
- 1/4 English cucumber, julienned
- 1 carrot, peeled and julienned
- 2 green onions, sliced
In a small bowl, whisk together all of the dressing ingredients and set it aside.
To assemble the salad, toss all of the ingredients together and drizzle with the dressing.
Serve immediately or store in the refrigerator for up to 3 days.
