Crispy Tofu Nuggets

- 16 oz extra-firm tofu, pressed and cut into small rectangles
- 2/3 cup 2% milk
- 2 tablespoons mustard
- 1/4 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup breadcrumbs
- Cooking spray
- 1/2 cup barbecue sauce
- Salt and freshly ground black pepper
Preheat the oven to 400ºF. Line a baking sheet with parchment paper. Set it aside.
In a small bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, and pepper. Whisk in the mustard and milk.
Dip the tofu, one piece at a time, into the seasoned batter and cover with the breadcrumbs. Transfer the breaded tofu onto the baking sheet. For extra crispy and nuggets, spray the tofu with the cooking spray. Bake the tofu until the breadcrumbs are golden, about 18 to 20 minutes, flipping once halfway through.
