Corn & Scallion Oatmeal

- 2 cup vegetable broth
- 1 cup old-fashioned rolled oats (gluten-free)
- 1 cup corn kernels, fresh or frozen
- 2 tbsp soy sauce
- 4 green onions, sliced
- 1 tsp sriracha sauce
- Salt and pepper to taste
- 2 large eggs, fried or poached
- 1/2 tsp sesame seeds for serving
In a medium pot, combine the vegetable broth, oats, soy sauce, and sriracha over medium heat. While stirring, bring the mixture to a simmer and continue to cook until all of the liquid has been absorbed, about 5 to 6 minutes. Add the corn and green onions and cook for an additional 2 minutes. Season with salt and pepper to taste.
Serve immediately topped with an egg, and sesame seeds.
