Corn & Avocado Salsa

- 2 cups corn, fresh, canned or frozen
- 2 avocado, diced
- 1 small red onion, finely diced
- 1 jalapeño, seeds and membranes removed and minced
- Juice of 1 lime
- Fresh cilantro to taste
- Salt and freshly ground black pepper
Combine all ingredients in a large bowl. Toss gently.
Serve immediately or store in the refrigerator for up to 5 days.
