- Classic Bruschetta

- 1 baguette, sliced
- 1/4 cup olive oil
- 2 garlic cloves
- 1 cup tomatoes, finely diced
- 1 shallot, minced
- 1/4 cup chopped fresh basil
- Salt and freshly ground black pepper
Preheat the oven to 350ºF.
Arrange the baguette slices on a baking sheet. Brush both sides of the bread with the olive oil. Rub the top side of each crostini with one of the garlic cloves and season with salt to taste. Bake the crostini until they are lightly golden and crisp, about 6 to 8 minutes.
While the crostini are baking, in a medium bowl, combine the tomatoes, shallot, and basil. Stir in the remaining olive oil, grate in the remaining garlic clove and season with salt and pepper to taste.
Top the crostini with some of the tomato mixture and serve immediately.
