Chili Lime Shrimp Tacos

- 1 tbsp oil
- 1 lb peeled shrimp
- 2 tsp chili powder
- 1 lime, zest and juice
- Salt and pepper to taste
- 8 corn tortillas
- 1/2 cup prepared pineapple salsa
- 1 jalapeno pepper, thinly sliced for serving (optional)
In a large skillet, heat the oil over medium-high heat. Add the shrimp to the skillet and season it with the chili powder, salt, and pepper. Cook, flipping once, until the shrimp becomes pink and opaque, about 4 to 5 minutes. Add the lime zest and juice and toss well.
To assemble the tacos, arrange the chili lime shrimp on corn tortillas and top with the pineapple salsa and fresh jalapeño pepper.
