Ingredients
- 1 tsp oil
- 1/4 jalapeno pepper, seeded and minced
- 1 tbsp cream cheese
- 3 large eggs
- 1 tbsp milk
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese
- 1/2 whole wheat pita
Preparation
In a large frying pan, heat the oil over medium-high heat. Cook the jalapeños for 30 seconds. Stir in the cream cheese and cook until it begins to soften, about 30 seconds.
In a medium bowl, whisk together the eggs, milk, garlic powder, salt, and pepper. Add the egg mixture to frying pan. Cook, stirring, until the eggs begin to set, about 2 minutes. Stir in the chicken and cheddar cheese and cook until the chicken has heated through, about 1 minute. Stuff the pita with the egg mixture.
Serve immediately.
