Ingredients
Burgers
- 2 yellow onions, diced and caramelized
- 2 15-oz cans lentils, drained and rinsed
- 1 tbsp balsamic vinegar
- 1/2 cup breadcrumbs
- 1 garlic clove, minced
- 2 tsp fresh thyme leaves
- 1 large egg
Toppings
- 4 hamburger buns
- 1/2 cup broccoli sprouts
- 1/2 cup roasted red peppers
- 1/4 cup crumbled goat cheese
Preparation
In a large skillet, melt the butter over medium heat. Add the onion and cook, stirring often, until it is golden brown and caramelized, between 15 and 20 minutes.
In a large bowl, mix all of the ingredients together. Divide the mixture into 4 and shape into patties. Place the patties on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
On a well-greased pan or grill, cook the patties until they are golden and they are heated through, about 4 to 5 minutes per side.
Assemble the burger on the buns with the toppings.
Serve immediately.
