Ingredients
- 1 tbsp vegetable oil
- 1 yellow onion, diced
- 3 celery ribs, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 garlic clove, minced
- 1 cup corn kernels, fresh or frozen
- 1 lb peeled shrimp
- 2 tbsp Cajun seasoning
- 1 lime, juice
- Salt and pepper to taste
Preparation
In a large skillet, heat the oil over medium-high heat. Add the onion, celery, red pepper, and green pepper. Cook until they have softened, 3 to 4 minutes. Add the garlic, corn, and shrimp. Season with the cajun seasoning, salt and pepper. Mix well and cover with a lid. Cook until the shrimp is pink, about 4 to 5 minutes. Add the lime juice and mix well.
Serve immediately or store in the refrigerator for up to 3 days.
