- Bruschetta Pizza

- 2 cups halved cherry tomatoes
- 2 tbsp chopped fresh basil
- 1 shallot, minced
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 store-bought pizza dough
- 1 cup tomato sauce
- 2 cups shredded mozzarella cheese
- 1 tbsp balsamic glaze
- Salt and pepper to taste
Preheat the oven to 500ºF.
In a medium bowl, mix together the tomatoes, basil, shallot, garlic, and oil. Season with salt and pepper to taste. Set it aside.
Roll the pizza dough to the desired thickness and transfer it to a pizza pan or baking sheet. Top it with the tomato sauce, half of the mozzarella, and the bruschetta mixture. Add the remaining cheese. Bake the pizza until the crust is golden and the cheese is melted, about 10 to 12 minutes.
Serve immediately drizzled with the balsamic glaze.
