Bruschetta Pasta Salad

- 1 tbsp balsamic vinegar
- 1/2-1 garlic clove, grated
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 cups cooked linguine
- 1 cup diced tomatoes
- 1/4 cup finely diced red onions
- 1/4 cup chopped fresh basil
- Freshly grated Parmesan cheese for garnish
In a small bowl, whisk together the dressing ingredients and set it aside. To assemble the salad, toss all of the ingredients together and pour over dressing.
Serve immediately topped with the Parmesan cheese or store in the refrigerator for up to 3 days.
