Broccoli Feta Scramble

- 2 tsp vegetable oil
- 1/2 cup finely chopped broccoli florets
- 1 garlic clove, minced
- 4 large eggs
- 2 tbsp milk
- 1/4 cup crumbled feta cheese
- 1/2 tsp dried oregano
- Salt and pepper to taste
In a nonstick skillet, heat the oil over medium-high-heat. Add the garlic and broccoli and cook until they have softened, 2 to 3 minutes.
Meanwhile, in a medium bowl, whisk the eggs and milk. Once the broccoli is bright green, add the eggs to the pan. Cook the eggs, stirring, until the eggs solidify. Season the eggs with the oregano, salt, pepper, and half of the feta. Mix everything together.
Serve immediately topped with the remaining feta.
