Baked Chicken Thighs

- 6 boneless skinless chicken thighs
- 3 white potatoes, cut into wedges
- 1 cup cherry tomatoes
- 1/2 red onion, chopped
- 2 tbsp oil
- 2 tbsp red wine vinegar
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper to taste
Preheat the oven to 400°F.
Arrange the chicken, potatoes, tomatoes, and onion in a single layer in a large baking dish. Season with the oil, vinegar, garlic powder, oregano, salt, and pepper.
Bake until the potatoes are tender and golden and the chicken has reached an internal temperature of 165°F, between 35 and 40 minutes.
Serve immediately or store in the refrigerator for up to 3 days.
