Ingredients
- 3 large eggs, boiled, peeled and chopped
- 2 tbsp plain Greek yogurt
- 1/2 lemon, juice
- 1 celery rib, finely diced
- 1 green onion, sliced
- Salt and pepper to taste
- 1/2 tomato, sliced
- 1/2 avocado, sliced
- 1 large whole wheat tortilla
Preparation
In a medium bowl, combine the eggs, green onion, celery, yogurt, lemon juice, salt, and pepper. On a large tortilla layer the tomato, avocado, and egg mixture. Roll it up and enjoy.
Serve immediately.
