Ingredients
- 1 cup smooth natural peanut butter
- 1/2 cup old-fashioned rolled oats (gluten-free)
- 1/2 cup coconut sugar
- 1 large egg
Preparation
Preheat the oven to 350°F. Line a baking sheet with parchment paper. Set it aside.
Combine all of the ingredients in a large bowl and mix well until a dough forms.
Roll the dough out into 1 inch balls and arrange them on the baking sheet. Using a fork, gently press down dough balls to form a cookie shape.
Bake until the cookies are golden brown, about 8 to 10 minutes.
Allow the cookies to cool for at least 5 minutes before devouring or once cooled, store in an airtight container for up to 5 days.
